Kale Catalan WayIngredients (for 2 servings)200 g kale, washed and spin dried, without hard stalks 2 Tbsp olive oil25g pine nuts25g garlic20g raisins1/4 tsp saltground black pepper to tastechili flakes if you like themInstructions:Tear kale leaves to bite size pieces. Slice garlic thinly or mince it. The finer the mince, the more intense the taste.In a skillet heat up 1 Tbsp of olive oil on medium heat. Add kale, sprinkle salt on it, and stir fry until it is completely wilted. Add black pepper and chili flakes if using. Remove from skillet. Heat up another Tbsp of oil, and add raisins. Stir fry for about 5 min. Add garlic and pine nuts. Stir fry for 2-3 more minutes, careful so they do not burn. Turn the heat off, return kale to the skillet and mix well.
