I'm only familiar with the Bob Ibex one wheel trailer. A friend uses it for bikepacking. It worked well for him, and is a necessity if you need a trailer and have to travel at times on single track trails.
I've personally only ever used a two wheel Burley Nomad trailer, so I have no direct experience with one wheel trailers.

I agree. I did not start riding at below zero Fahrenheit temperatures until after I got my battery powered heated socks and gloves.

One other item to remember about cold weather riding: You generate additional windchill by your movement. In my case when riding my fatbike or studded tire gravel bike, I'm averaging 9 to 11 mph. So even in calm, very cold weather, I figure out the equivalent windchill at the 10 mph mark.

Yes, when you are retired, you can always wait out the worst of the weather. The day I rode at -11F and -31F windchill, it was early in the afternoon. At daybreak it was -22F and -50F windchill. So I waited for the sun to warm things and the winds to diminish.
That was the day of the general strike and protest in Minneapolis (80 miles from here) and the protesters were out longer than me in that weather, a HUGE number of very brave folks.

Given the number of folks here with Swedish or Norwegian ancestry, "Nordic" might seemingly apply to Minnesota too. (My Minnesota born wife is part Swedish.)

My coldest ride this season was -11F, with -31F wind-chill. I bailed after 3 miles for a 6 mile round trip.
