You can follow hashtags here, the same way you follow accounts, and see more topics you're interested in. Click on the hashtag, then when the page appears with the hashtag on top of it, click on "Follow."
Because there is no algorithm here boosting posts artificially, that really is a great way to find feed that interests you and come across new accounts.
